Egg Redemption

Sunday morning found us out of eggs again. (Always on a Sunday, right?) Well the good news is that powdered eggs are great in pancake batter, Mark's specialty. Thanks, Mark!

Mark and I tried out some of my homemade Borscht that I canned. Unfortunately, the beautiful color had washed out of the beets and some of the fresh beety goodness was gone. Not my fav, but still handy to have around since Mark and I love borscht so much. I'll probably keep some canned Borscht around for convenience, but I'll stick to making it fresh for special occasions.
